Blueberry Honey Muffins

These muffins are a great way to start the day and are fantastic for the lunchbox too.

½ cup butter, softened

1 cup sugar

2 eggs

¼ cup honey

1 tsp vanilla 2 cups flour

2 tsp baking powder

¼ tsp salt

½ cup milk

1 cup fresh or frozen blueberries

Preheat oven to 350°F. In a mixing bowl, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in honey and vanilla. In another bowl, combine flour, baking powder and salt; add to wet ingredients alternately with the milk, beating to just combine. Gently fold in berries.

Coat muffin tin with non-stick cooking spray or line with paper liners. Fill each tin ¾ full of batter. Bake for 20 to 25 minutes or until done. Makes one dozen muffins.
