Every cook needs a pumpkin pie recipe in their repertoire. This is our favourite.
2 cups pureed pumpkin
1 can sweetened condensed milk
2 tsp pumpkin pie spice
1 9” pie shell, unbaked
Preheat oven to 425°F. Whisk together pumpkin, milk, eggs, and pumpkin pie spice. Pour into pie shell. Bake at 425°F for 15 minutes. Reduce oven temperature to 350°F. Bake for another 35 to 40 or until a knife inserted in centre comes out clean. Cool and serve with whipped cream or a scoop of vanilla ice cream.
