Green Goddess Dressing
If you haven’t tried this dressing, you’re missing out. There are many versions out there, but this is our favourite.
1 avocado, peeled and seed removed
½ c. water
3 tbsp. cider vinegar
½ green onion, chopped
2 tbsp. white onion
1 tbsp. lemon juice
¼ c. chives, chopped
½ c fresh flat leaf parsley
1/3 c. fresh basil leaves
1 tsp. garlic, minced
¼ c. olive oil.
½ tsp sea salt
Pepper to taste
Place all ingredients except olive oil, salt and pepper into a blender. Blend until just smooth. Add olive oil and blend lightly. Salt and pepper to taste. Chill for at least two hours before using, and it lasts 3 days in the refrigerator.
This dressing is delicious on a Cobb salad with your favourite greens, chicken, sliced hard boiled egg, bacon, corn and tomato.
