Teriyaki Chicken Nourish Bowl
½ c. brown rice, cooked and warm
2 tbsp. olive oil, divided
¼ cup teriyaki sauce, divided
1 boneless skinless chicken breast, cubed
½ c. red pepper, sliced
½ c. zucchini, sliced into coins
½ c. purple cabbage, shredded
½ cup frozen edamame, thawed
2 tbsp. cilantro, chopped
2 tbsp. peanuts, chopped
In a single serving bowl, place rice.
Heat a frying pan and spray lightly with cooking spray. Toss zucchini and pepper in olive oil and add to pan. Cook and stir for 6 to 8 minutes. Place on top of rice.
Add remaining oil to frying pan and place chicken in pan. Cook and stir for 10 min. or until cooked. Top with teriyaki sauce and stir. Add on top of vegetables and rice.
Heat a grill pan over medium-high heat and lightly grease with cooking spray. Toss zucchini and bell pepper in 1 tablespoon olive oil. Add to pan and grill for 3-4 minutes, then turn and grill 3-4 minutes longer. Divide vegetables between two bowls.
Top with cabbage, edamame, cilantro and peanuts. Drizzle with teriyaki sauce and enjoy!
Mediterranean Power Bowl
½ c. brown rice, cooked and warm
½ c. grape tomatoes, sliced
¼ c. red onion
½ c. cucumber, sliced
¼ c. feta cheese
½ c. chickpeas, drained and rinsed
¼ c. hummus
2 tbsp. Kalamata olives, sliced
2 tbsp. Greek dressing
In a single serving bowl, place rice. Place tomatoes, cucumbers, chickpeas, feta cheese and hummus on top the rice, in sections.
Top with dressing and sprinkle with olives and red onions. Enjoy!
