Holiday Delights to Love

Your turkey, ham or roast beef will love this salad and potato side, and this fabulous dessert to end the meal.

Roasted Garlic Mashed Potatoes

  • Ingredients

    1 head of garlic
    1 tbsp olive oil
    2 lbs Yukon Gold or Russet potatoes, peeled and cut into 1” chunks
    Salt
    1/3 cup whipping cream
    4 tbsp butter, melted
    Salt and pepper to taste

  • Directions

    Preheat oven to 400°F.
    Remove any loose, papery, outer layers of the head of garlic, leaving full head intact with cloves connected. Cut ¼” from top of the head of garlic to expose the tops of the cloves of garlic. Coat garlic in olive oil and wrap in foil. Bake garlic for 35 to 40 minutes or until cloves feel soft and are beginning to brown. Remove from oven and let cool. While cooling, bring a large stock pot of salted water to a boil. Add potatoes and cook for 15 minutes or until tender. Drain and return to stove on low heat to dry for two minutes. Remove from heat and add cream and butter. Squeeze roast garlic cloves into potatoes and toss garlic heat once cloves are removed. Mash potatoes into desired consistency and add salt and pepper to taste.

Merry Christmas Salad

  • Ingredients

    1 16 oz bag spinach
    1 Granny Smith apple,
    cored and sliced thinly
    ½ cup crumbled feta,
    goat or blue cheese
    3/4 cup pecans, chopped
    3/4 cup dried cranberries
    ½ cup olive oil
    ¼ cup apple cider vinegar
    3 tbsp honey
    1 tbsp red onion, finely chopped 1 tsp dried mustard powder
    2 tsp poppy seeds
    Salt and pepper to taste

  • Directions

    In a large salad bowl, add spinach. In a small bowl, add olive oil, vinegar, honey, onion, mustard powder, poppy seeds, salt, pepper and whisk until combined. Add to spinach bowl and toss well. Sprinkle with sliced apple, cheese, pecans and cranberries and serve.

Heavenly Homemade Gingerbread

  • Ingredients

    2 cups all-purpose flour1 tsp baking soda1½ tsp ground ginger1 tsp cinnamon½ tsp salt½ cup butter, melted½ cup brown sugar, packed2 large eggs½ cup hot water ¼ cup molasses
    Glaze½ cup brown sugar, packed1 tbsp cornstarch¼ cup water⅓ cup whipping cream1 tbsp butter1 teaspoon vanilla

  • Directions

    Preheat oven to 350°F and grease a 9” square baking pan. In a large bowl, combine flour, baking soda, ginger, cinnamon and salt. In another bowl, whisk together butter, sugar, and eggs until well combined. Whisk in hot water and molasses. Add molasses mixture to the dry ingredients and stir until just combined. Pour batter into pan and bake for 40 minutes until a toothpick inserted in centre comes out clean. Set aside.
    Glaze: In a small saucepan over medium heat, whisk together sugar and cornstarch. Stir in 1/4 cup of water and whisk until smooth. Add the cream and butter and cook over medium-heat, stirring until the sauce is thickened and bubbly. Remove from heat and stir in vanilla. Drizzle over warm cake and serve.
