Orange Olive Oil Bundt Cake 

  • Ingredients

    2 eggs
    ⅔ c. sugar
    1 tbsp. orange zest
    1 tbsp. lemon zest
    ½ c. olive oil
    ½ c. orange juice
    1½ c. all-purpose flour
    1 tbsp. baking powder

  • Directions

    Preheat oven to 350F. In a large bowl, whisk together eggs and sugar. Add zest and stir in oil and orange juice. Stir in flour and baking powder; do not overmix as the batter will be slightly lumpy.
    Pour batter into a greased 8” Bundt or round cake pan. Bake for 45 min. Cool in pan for 5 min. and then turn onto a wire rack. Let cool completely and serve with whipped cream and your favourite berries.

Old-Fashioned Lemon Bars 

  • Ingredients

    Crust2 c. all-purpose flour ½ c. sugar¼ tsp. baking powder ½ tsp. salt1 tsp. vanilla1 egg1 c. butter, softened
    Filling2½ c. sugar ¾ cup flour6 large eggs1 tbsp. lemon zest1 c. fresh lemon juice Pinch of saltIcing sugar

  • Directions

    Preheat oven to 350F and line the bottom and sides of a 13 x 9 pan with parchment paper.
    For the crust, combine flour, baking powder, sugar and salt in a medium bowl. Add softened butter, egg and vanilla extract and fold it several times to make a dough.
    Spread the crust over the bottom of the pan. Spread evenly and pat into the pan. Bake for 18 to 20 minutes or until edges are just getting lightly browned. Remove from the oven and let cool.
    For the filling, whisk together sugar and flour until combined. Stir in eggs, lemon juice, zest, and salt. Whisk together to combine and don’t overmix.
    Pour the filling over cooled crust and bake for 25 to 28 minutes or until relatively set. Remove from oven and cool for 20 to 30 minutes, then refrigerate until cold and firm. Dust with icing sugar and cut into squares.

Strawberry Rhubarb Crisp 

  • Ingredients

    3 c. rhubarb, chopped into small pieces 3 c. strawberries, sliced
    1 c. sugar
    1 ⅓ c. flour, divided
    ½ tsp. cinnamon
    1 c. brown sugar
    1 c. old fashioned oats
    ¼ tsp. nutmeg
    ½ c. butter, melted

  • Directions

    Preheat oven to 350F. In a large bowl, combine fruit, strawberries, sugar, ⅓ c. flour and cinnamon. Pour into a greased 13 x 9 baking pan.
    In another bowl, combine remaining flour, brown sugar, oats and nutmeg. Pour into butter and blend well. Sprinkle evenly over fruit mixture. Bake for 35 to 40 minutes. Serve warm with whipped cream or vanilla ice cream.
