Best Bean Dip

  • Ingredients

    1 can (540 ml) lentils, drained and rinsed1 can (540 ml) white or red kidney beans, drained and rinsed½ cup red pepper, chopped3 green onions, chopped1 cup chunky salsa½ cup Catalina salad dressing1 to 2 tsp chili powderPinch cayenne pepper, optionalFresh chopped cilantro, optional for garnish.

  • Directions

    In a food processor or blender, add lentils, beans, pepper, onion, salsa, salad dressing and spices. Pulse until combined. Add to a serving bowl and chill for several hours to blend flavours. Serve with tortilla chips or crackers.

Maple Pecan Apple Baked Brie

  • Ingredients

    ½ tart apple, cored and finely chopped
    1 tbsp pecans, finely chopped
    2 tbsp maple syrup
    4 sheets phyllo dough
    2 tbsp melted butter
    125 g round Brie

  • Directions

    Preheat oven to 400°F. In a bowl, add apple, nuts and syrup, stir and set aside. Spread out one phyllo sheet on a board and brush with butter. Repeat with remaining sheets, brushing each with butter. Cut a 10” circle from the stack. Cut brie round horizontally and place one half in the circle. Top with half of apple nut mixture. Top with second cheese half and remaining apple nut mixture. Wrap phyllo around cheese, folding as needed to completely cover cheese. Brush with remaining butter and place on cookie sheet or pie plate Bake for 15 minutes or until golden brown. Serve immediately with crackers.
