How to make simple syrup
Summer Mocktail Sangria
Ingredients
2 cups orange juice 1 cup apple juice
½ cup cranberry juice (or pomegranate juice for a deeper colour) ½ cup sparkling water or club soda
1 orange, thinly sliced 1 lemon, thinly sliced 1 lime, thinly sliced 1 apple, diced
½ cup strawberries, hulled and halved
½ cup blueberries
½ cup grapes, halved Fresh mint leaves, for garnish

Directions
In a large pitcher, combine orange juice, apple juice and cranberry juice. Stir well. Add all the sliced and chopped fruits to the pitcher. Refrigerate for at least 1–2 hours to let the flavours meld.
(Longer is better!) Just before serving, add sparkling water or club soda for a fizzy finish. Fill glasses with ice, pour over the chilled sangria and garnish with a sprig of mint.
Pineapple Moscow Mule
Ingredients
2-3 lime wedges
2 oz pineapple juice
1 oz orange juice
½ cup ginger beer
Directions
Muddle lime wedges in a shaker. Add pineapple and orange juice with ice and shake. Strain into a glass over ice and top with ginger beer.
Kiwi Mojito Mocktail
Ingredients
1 kiwi, peeled and chopped
½ oz honey
4–5 mint leaves
½ lime, juiced
Club soda
Directions
Muddle kiwi, honey and mint in a glass. Add ice, pour in lime juice and top with club soda.
